Quinoa And Chickpea Salad

Ingredients
- 1/4 cup quinoa
- 1/2 cup water
- 1/4 cup canned chickpeas
- 1/2 tsp cumin
- 1/2 tsp paprika
- 3 Brussel sprouts
- 1/2 cup red cabbage
- 1/2 cup spinach leaves
- 1/4 cup capsicum
- 1/2 avocado
- 1/2 lemon, juiced and wedge
Method
- Rinse the quinoa then bring to the boil with 1⁄2 cup water. Cover and simmer until tender, about 15 minutes.
- Drain and rinse the chickpeas, then toss in the cumin and paprika spices.
- Lightly steam the Brussel sprouts until tender.
- In a bowl, lay the red cabbage, spinach leaves, Brussel sprouts, capsicum and sliced avocado.
- Add the cooked quinoa and chickpeas. Drizzle with lemon juice and serve with a wedge of lemon and sprinkle of paprika.
