Zucchini Bread
SERVES 12 | 80 Minutes Total Time


Ingredients
- 1 cup grated zucchini
- 1 1/2 cups almond flour
- 1/4 cup maple syrup
- 3 whole eggs
- 1 tbs coconut oil
- 1 1/2 tsp ground cinnamon
- 1 1/2 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp sea salt
Method
- Pre-heat the oven to 180C. Line a 21cm by 11cm bread loaf pan with baking paper.
- Combine all of the ingredients for the bread, except the zucchini, in a mixing bowl.
- Grate the zucchini and stir into the batter, then pour into the loaf pan.
- Once the batter is combined and smooth, pour it into the loaf pan.
- Bake for 1 hour, until golden brown on top and a skewer inserted into the middle comes out clean.
