Japanese Miso Beef & Eggplant
SERVES 2 | PREP 10mins | COOK 15mins
This is such a quick and easy dish to cook; just make sure you have all ingredients ready to go before you start.


Ingredients
- 1 tsp sesame seeds
- Oil spray
- 1 medium eggplant, diced
- 300g lean beef mince
- 100g green beans, trimmed & sliced
- 4 leaves silverbeet, sliced including stems
- 4 sprigs of coriander
Sauce
- 1/2 tsp sesame oil
- 1 tbs miso paste
- 1 tbs mirin
- 1 tbs tamari (or light soy sauce)
- 1 red chilli, thinly sliced
- 1 tbs water
Method
- Place rice in a saucepan with 1 1/4 cups of cold water and bring to a gentle Combine sauce ingredients and set aside.
- Heat a wok or frypan over high heat and toast sesame seeds for a minute until golden.
- Spray wok or pan with oil, add eggplant, spray with a little more oil and cook until browned, tossing regularly. Add beef and stirfry until brown.
- Add beans, silverbeet and sauce and cook until silverbeet has just softened.
- Remove from heat and scatter over toasted sesame seeds and coriander.
