Avocado Toast With Spicy Chickpeas
SERVES 2 | 20 Minutes Total Time


Ingredients
- AVOCADO
- 1 ripe avocado mashed
- Salt and ground black pepper, to taste
- 1/4 tsp spicy seasoning
- 1 tsp lemon juice or lime
- CHiCKPEAS
- 1/2 tsp coconut oil
- 1/2 can of chickpeas
- 1/2 tsp turmeric
- 1/4 tsp spicy seasoning
- Salt and ground black pepper, to taste
- 1 tsp lemon or lime Juice
- TO SERVE
- Chopped parsley, to garnish 4 slices of gluten-free bread, (or sourdough if preferred)
Method
- Scoop avocado and mash, add salt, pepper, seasoning and a generous squeeze of lemon or lime juice. Mix it well and set aside. You may also add garlic if you wish.
- Heat a frying pan and add oil. Drain the chickpeas and add them to the pan with the seasonings and lemon or lime juice. Allow to cook for 3-5 minutes, mixing frequently until you reach your desired crunchiness.
- If you like them softer, fry for less, but leave for up to 5 minutes to reach that slight outside crunch and softer inside.
- While the chickpeas are cooking, toast 2 slice of bread.
- Spread half the mashed avocado over toast, add half the spicy chickpeas and garnish with some chopped parsley.
- Store remaining chickpeas, avocado, bread and parsely seperately in the refrigerator for your next serving.
