Asian Pork & Greens

This Asian-inspired pork dish is so quick and easy, it’s the perfect mid-week meal. Feel free to mix up the mushrooms and greens – button mushrooms and broccolini or snow peas work just as well.


Ingredients
- 1 tsp olive oil
- Half a 400g tin cannellini beans
- 1/2 garlic clove, minced
- 1/4 tsp rosemary, finely chopped
- salt & pepper, to taste
- 30g spinach leaves
- 1 slice sourdough bread, toasted
- lemon wedge, to serve
- 1 egg, boiled
Method
- In a small saucepan, heat olive oil and minced garlic, then add beans and rosemary. Stir through until hot. Season with salt and pepper. Top sourdough with spinach leaves and spoon over beans. Squeeze with lemon juice. Serve with a boiled egg.
