Turkey Cauliflower Chili
SERVES 5 | 70 Minutes Total Time


Ingredients
- 1 medium onion, diced
- 1 capsicum, diced
- 1 tbs tomato paste
- 1/2 tsp salt
- 1 batch of cauliflower rice. (Refer to Cauliflower Rice Recipe)
- 750g turkey or chicken mince
- 2 tbs chilli powder
- 2 tsp cumin
- 1 tsp dried oregano
- 2 cloves of garlic, minced
- 400g canned diced tomatoes with juice
- 1/2 cup tomato passata
- 1 cup chicken broth
- 150g jap pumpkin, diced
Method
- Make the cauliflower rice as per recipe on page 37.
- Heat a large pot over a medium-high heat, spray with cooking spray and add onions, capsicum, tomato paste, and sea salt. Sauté for a few minutes until the vegetables are soft.
- Add the cauliflower rice, and cook for another minute.
- Add the mince, chilli powder, cumin, and oregano, stirring the mince, working to break it up into small pieces.
- Add the garlic and cook for another minute.
- Add the remaining ingredients. Stir together, then cover and simmer for 30 minutes.
- Divide into 5 portions. One to eat now and freeze the remaining 4 for leftovers.
- Top with avocado, coriander and chilli slices (optional).
