Salmon & Quinoa Salad

This flavoursome meal is a spin on the classic Lebanese dish, tabouli. Easy to prepare, this fresh, cool and tasty salad is one to have in your repertoire!


Ingredients
- 1/3 cup quinoa, rinsed
- 1 Lebanese cucumber, diced
- 6 cherry tomatoes, halved
- 1/2 bunch continental parsley, finely chopped
- 1 spring onion, finely sliced
- 210g tin salmon, drained
- 20g walnuts, finely chopped
- 1 tbs lemon juice
- 1 tbs olive oil
Method
- Cook quinoa in 2/3 cup of salted water for 15 minutes, or until tender. Drain and set aside to cool.
- Combine all remaining ingredients to serve.
