Mini Frittata

Ingredients
- 1/4 cup spring onions, finely sliced
- 2 bunches of asparagus, woody ends removed, chopped into bite size pieces
- 4 eggs
- 4 egg whites
- 4 tbs reduced fat cottage cheese
- salt & pepper, to taste
Method
- Preheat oven to 190°C/170°C fan-forced. Grease 4 round-based small muffin trays.
- Combine asparagus, eggs, egg whites, cottage cheese, red onion and spring onion in a bowl. Spoon evenly into holes of prepared pan.
- Bake for 30-40 minutes or until golden and set.
