Healthy Tacos With Coriander Yoghurt
SERVES 2 | 25 Minutes Total Time


Ingredients
- 1 tsp olive oil
- 500g lean beef mince
- 1/2 white onion
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp oregano
- Sea salt and black pepper to taste
- 8 lettuce cups (4 per serve)
- 50g Greek yoghurt
- 5g fresh coriander
- 1/4 tsp black pepper
- A squeeze of lemon juice
Method
- Heat the oil in a frying pan and sauté the finely diced onion and spices together.
- Next, add the beef mince and brown in the pan.
- Simmer for 10 minutes or until juices have absorbed, and season with salt and black pepper.
- Divide 8 lettuce cups and wash in ice cold water until needed.
- Blend Greek yoghurt, coriander, black pepper and lemon juice together using a hand blender or food processor.
- Assemble 4 lettuce cup tacos for eating now. Place a scoop of mince in each lettuce cup, then top with half of the yoghurt mixture.
- Store remaining beef, lettuce and yoghurt seperately in the refrigerator. Heat beef mixture before assembling leftover tacos.
