Chicken Sesame Slaw With Creamy Miso Dressing

Ingredients
- 20g red miso paste
- 1 clove garlic, crushed
- 2 tbs sesame oil
- 300g chicken breast, cut in 3cm chunks
- 1/2 wombok cabbage, finely shredded
- 1 medium carrot, grated finely
- 1 spring onion, finely sliced
- 1 tbs lime juice
- 1 tbs Greek yoghurt
- 1/4 tsp chilli flakes
- 1 tsp black and/or white sesame seeds
Method
- Combine 3 teaspoons of miso, garlic and 1 tablespoon of sesame oil in a dish. Add the chicken to marinate.
- Gently toss wombok, carrot, and spring onion in a bowl.
- Heat a frying pan over high heat and cook the chicken for 5-8 minutes until golden and cooked through.
- Combine lime juice, yoghurt, chilli, 1 tablespoon sesame oil, and 3 teaspoons of miso. Drizzle over salad and mix to combine.
- Place half the salad and chicken into a bowl. Scatter over sesame seeds and enjoy!
- Store the remaining portion in the refrigerator for leftovers.
