Avocado & Feta Quesadilla

Enjoy this south-of-the-border snack, which is light on grease and heavy on flavour.


Ingredients
- 1 large corn tortilla
- 1/8 avocado, sliced
- 60g feta cheese
- 20g rocket or salad greens
- salt and pepper, to taste
Method
- Preheat sandwich press or non-stick frying pan.
- Add avocado, crumbled cheese and rocket to half of the tortilla and season. Fold in half to toast in press or in frypan, until golden.
